Fine slivers of wild shrimp carpaccio gingerly laid on a clear plate and served with a bouquet of aromatic leaves and petals is the perfect starter. A must-try luxury and one of spring’s harbingers, albeit seasonal, is German white asparagus seared with prosciutto and Portobello, served with mustard ice cream. Continue with seared scallop with corn, shallot crisps, sprouts and foie gras emulsion, or a light red capsicum soup, to prepare your palate for the main event: succulent grilled Chilean sea bass served with black rice, mingling with young vegetables and laced with teriyaki froth. Conclude your ritzy meal with a delicate yoghurt panna cotta or a rich chocolate-covered pistachio mousse served on a fruit coulis with assorted berries.
