The Embassy of Spain in the Philippines treated a select gathering to a scrumptious selection of dishes and excellent wines at this year's Tapas Night held at the Green Sun Hotel in Makati last 1st April 2017.
Considered a prelude to Madrid Fusion Manila 2017, the event featured tapas, hearty mains, and desserts from some of the country's finest local and expatriate chefs. Showing off their skills during the event were Juan Carlos de Terry (Terry's Selection), Carlos Garcia (The Black Pig), Jordy Navarra (Toyo Eatery), Margarita Forès (Cibo di M), Chele Gonzales (Vask Tapas Room), Edgar Sanuy (La Lola Group), Nicolás Diaz (Barcino), Amado Fernandez (Pablo), and Miko Aspiras (Le Petit Soufflé).
Collaborating in groups of three, the chefs produced palate-tempting dishes that creatively merged fresh, locally-sourced ingredients into some of the classics of Spanish cuisine. The menu also included an excellent selection of Spanish cheeses and charcuterie, as well as legs of pata Negra jamón Iberico beautifully carved by Maestro Michael Lopéz, one of only two Filipinos certified as maestro contadores in Spain.
Guests also took their pick from a well-selected menu of libations that included cavas from Catalan vintner Vilarnau and Estrella Damm's limited edition Inedit Beer crafted by the legendary chef Ferran Adria of El Bulli.
